Fenchel und Limette geht das? Ja! Wunderbar! Ein schöner kleiner Zwischengang , der erfrischt und den Appetit anregt oder war es doch schon die Verdauung?! Der Fenchel verliert durch das Kochen etwas an von seinem dominaten Aroma und harmonisiert so wunderbar mit der Limette. Abgerundet wurde das Sorbet mit einem Schuß Pastis, der wie immer, natürlich optional sein darf, hier aber natürlich sehr gut passt. Das Fenchelgrün auf keinen Fall entsorgen, sondern natürlich mitkochen bzw. für das Finish aufheben.
- Fenchel-Limetten-Sorbet
- für 4 Personen frei nach Gwex
- Fenchelknolle, 1 mittlere
- Wasser, 250 g
- Zucker, 100 g
- Glukosesirup, 2 Esslöffel
- Fenchelsaat, 1 Esslöffel
- Limettensaft, 1 Frucht
- Pastis, 1-2 Esslöffel
- Spinatpulver oder grüne Lebensmittelfarbe, 1 Messerspitze
- Fenchelsaat in einer beschichteten Pfanne ohne Fett rösten, abkühlen lassen und dann mit etwas Zucker fein mörsern.
- Fenchel fein hacken, Zucker und Wasser aufkochen, Fenchelpulver und -gemüse dazugeben und köcheln lassen, bis dieser weich ist. Ansatz abseihen, mit Spinatpulver färben und anschließend abkühlen lassen.
- Masse mit Limettensaft abschmecken und in der Eismaschine gefrieren lassen. Kurz vor der Fertigstellung etwas Pastis dazugeben.
Das lege ich mal auf Wiedervorlage. Mir ist heute so kalt, dass ich an Sorbet nicht denken kann. Schon allein wegen der Knallerfarbe ist es aber ein Hit.

AntwortenLöschenGefällt mir.Ich würde das Sorbet mal mit rohem Fenchelbrei probieren, dessen Geschmack ich lieber mag als gekochten Fenchel. Ich mache (und esse) nie Zwischensorbets, aber dieses Sorbet kann ich mir gut als Mini-Portion zu Wolfsbarsch vorstellen. Oder zu einem Dessert mit Orangen, oder als einfachen Sommergenuss!
AntwortenLöschenBis jetzt war Stand ich mit Fenchel immer auf Kriegsfuß. Selten hat mit ein essen mit Fenchel geschmeckt. Aber das Sorbet klingt so lecker das ich der Sache noch mal eine Chance geben werde. Mal sehen vielleicht überrascht mich der Fenchel ja ;-)
